Bell Pepper Tomato Soup



I forgot to mention I made really good 1 point tomato soup. It's from Weight Watchers and called Bell Pepper-Tomato soup. It's not to hard, but made me feel like a master chef.

2 tsp olive oil
2 medium garlic cloves, minced
1 medium onion diced
1 medium carrot chopped
1 1/2 tsp herbes de Provence. (Internet search gave me easy recipe for this her mixture)
3 medium sweet peppers orange or red sliced
14 1/2 oz can of chicken broth
28 oz can of crushed tomatoes
1 tsp of salt
1/2 cup of fat free creamer or fat free half and half. (I used powdered fat free coffee creamer)
1/2 tsp of black pepper
1 tsp sugar

In large pot, heat oil over medium heat. Add garlic, stir until fragrant about 1 minute. Add onion and carrot. cook until onion is tender about 5 minutes.

Add herbes de Provence, cook stirring until fragrant about 1 minute. Add peppers cook until begins to soften about 5 minutes. Add broth and tomatoes.

Bring to a boil. cover, simmer for 25 minutes. Stir in salt, pepper, creamer, sugar. Puree in small batches, briefly reheat if needed.

Yields eight 1 cup servings of 1 point value.
